It's time for weekly menu planning again! I'm not cooking tonight (Saturday) because we're going to the local Strawberry Festival, but I'll be back in the kitchen soon enough. If we get home in time tonight, I'm going to make up a batch of cinnamon rolls to have for breakfast tomorrow. I was going to do that last night, but used up all my flour making pizza dough, so it had to wait.
We're dog-sitting for the in-laws this weekend, and they invited us to use their grill while we're there. We still haven't cleaned our gas grill that was in storage for the four years we were in Japan, so we haven't been able to grill at home yet. So tomorrow we're planning on bringing some food over when we care for the dogs, and having a BBQ while the kids play on the trampoline. And hey, since it won't be at our house (where we're trying not to eat meat), that means I can cook meat! ; ) Brad, who has very patiently and willingly gone along with me in our quest to eat a (mostly) vegetarian diet at home, has really been craving a steak, so I think that's what we'll have.
Sunday - BBQ day! Grilled steaks, baked potatoes, corn on the cob
Monday - Pasta with herbs and butter
Tuesday - Spanakopita
Wednesday - Cabbage rolls, mashed potatoes
Thursday - Leftovers
Friday - Black bean and rice enchiladas, Spanish rice, refried beans, Sangria
Saturday - Leftovers

I love spanikopita but have never tried to make it...is it hard?
I made it once in high school, but not since then, so we'll see how it turns out!
