Crispy Sage and Brown Butter Pasta

Tonight's dinner was Crispy Sage and Brown Butter Pasta, from Technicolor Kitchen. If you're looking for a really simple, really delicious, really decadent dinner, definitely try this recipe. I couldn't believe how fast and easy it was, and how absolutely delicious!

Crispy Sage and Brown Butter Pasta

200g (7oz) spaghetti
50g (1 ¾oz) unsalted butter
1/3 cup sage leaves
1 tablespoon lemon juice
sea salt and freshly ground black pepper
grated parmesan, to serve

Place the pasta in a large saucepan of salted boiling water and cook until al dente; drain and set aside.

Meanwhile, heat a non-stick frying pan over medium heat. Add the butter and stir until melted. Add the sage and cook for 2-3 minutes or until the sage is crispy and the butter is browned.

Stir through the lemon juice, drained pasta, salt and pepper and toss to combine.

Top with the parmesan and serve.

Serves 2

This reminds me of something that I have had at a resteraunt here in Atlanta. The place is the Spaghetti Factory and my fave there is spaghetti with browned butter and mizithra cheese. IT IS TO DIE FOR!!! (pardon my cyber yelling).

I wish I could find that cheese somewhere to buy because it is amazing!!

I did happen to find a recipe for it though....they say if you can't find the cheese you can use ricotta and romano cheese for a close substitute.

6 ounces Spaghetti
4 tablespoons Butter
1/2 cup Mizithra cheese shredded

Instructions for Spaghetti with Browned Butter and Mizithra Cheese

Cook pasta in salted water according to package directions.
While the spaghetti is cooking, heat the butter over medium heat; the butter will froth a bit, and then start to turn a nice golden brown. Let the butter cook until it is a light caramel color. Set aside.
Drain the pasta.
Carefully pour off the butter into a small dish, being careful to leave behind the solids that have settled to the bottom of the pan.
Mix the butter, spaghetti, and most of the cheese (save some to sprinkle on top).
Garnish with remaining cheese.

simple and delicious! i used to put so much parmesan cheese on my pasta that it coated the noodles and became all i could taste. fortunately, i now appreciate flavors other than parmesan cheese and i think sage would be an awesome addition!
