Grilled Pizza with Fresh Basil, Tomatoes and Cheese

1 recipe pizza crust
1 Tbsp cornmeal
2 tsp olive oil
3 tomatoes, cut into ¼-inch slices
¼ c fresh basil leaves, cut into ribbons
1 ball fresh mozzarella cheese, cut into thick slices
Salt & pepper

Prepare pizza crust dough, shaping into 2 (10-inch) circles. Place dough circles on a baking sheet sprinkled with cornmeal. Heat barbecue grill.

Place 1 crust, cornmeal side up. On a grill rack coated with cooking spray; cover and grill 3 minutes. Flip crust over. Brush with 1 tsp olive oil. Top with half of tomato slices and mozzarella slices, and sprinkle with basil. Season with salt and pepper. Cover; grill 4 to 5 minutes or until cheese melts and crust is lightly browned. Repeat procedure with remaining crust and toppings.

Note: This is good with any variety of toppings. One of my favorites is chunks of cooked chicken breast, red onion, mozzarella cheese and cilantro, drizzled with barbecue sauce. Chicken chunks, green onion, bean sprouts, shredded carrot, mozzarella cheese, cilantro and Thai peanut sauce is also delicious. Goat cheese, roasted garlic cloves, fresh parsley, kalamata olives, sliced mushrooms, diced fresh tomatoes and mozzarella cheese is another favorite.
