Fruit Cobbler

4 c fresh fruit, sliced
3 Tbsp butter, softened
¾ c water
1 tsp vanilla
1 c flour
¼ tsp salt
2 tsp baking powder
½ c milk
½ c sugar
1 Tbsp cornstarch
1 tsp cinnamon
1 c boiling water

Preheat oven to 350. Lightly coat a 7 x 12 pan with cooking spray. Spread fruit evenly in pan; set aside.

Cream butter, sugar and vanilla. Combine flour, salt and baking powder; stir to mix well. Blend flour mixture into creamed mixture alternately with milk. Beat until smooth. Spread over fruit.

Mix ½ c sugar, cinnamon and cornstarch. Sprinkle over fruit. Pour boiling water over all. Bake for 50 to 60 minutes.

This is absolutely delicious with sour pie cherries!
